We make our gelato with very high-quality ingredients, staying true to the original recipes from our homeland, Italy. By producing our gelato on-site daily, we achieve full bodied texture and flavor in our gelato.
We aim to embody the “farm to table concept” using products from local farmers whenever possible. When we import ingredients, we source them from small producers that prioritize quality over quantity. Flavorings, GMOs and preservatives have no place at Gelato & Co.
Our creative, passionate gelato makers propose a fresh selection of gelato flavors every month, in order to take advantage of seasonal ingredients and match seasonal flavors.
Our sorbets are completely dairy free, vegan, and full of real fruit.
Our products are made fresh daily on the premises. We offer more than 20 flavors and a select number of bespoke gelato cakes and single serving pastries (or desserts).
Although our inspiration is derived from our Italian roots, our customers are our real source of inspiration.

Our piece of Italy in Colorado
Gelato & Co. Colorado was born from a dream shared by the whole Barsness family: Susan and Dean, along with their kids Jonathan and Sarah. It’s a story that started with the family’s passion for Italian culture and cuisine which stems from their Italian origins. Susan’s father Hugo was born in Barga– a Tuscan hilltop town outside of Lucca. After a lifetime of experiencing all small-town Italy has to offer, the family wanted to bring the Italian dessert café experience to Denver. The family shares a mutual passion for authentic Italian gelato, pastries and espresso – in October 2020 they opened their locally-owned and operated shop in Highlands Ranch, CO.
