We make our gelato with the very best, real ingredients, in their raw and most natural form – everything is made from scratch. “Ready made” ingredients including colorings, flavorings, GMOs preservatives and pastes have no place at Gelato & Co.
By using real ingredients, we achieve full bodied texture and flavor in our gelato. We aim to embody the “farm to table concept” using organic produce from local farmers whenever possible. When we import our products, we source them from producers using sustainable “green” energy.
Our dairy flavors are low in fat because we use less cream than industrial ice-cream and our sorbets are completely fat free, dairy free, vegan, and full of real fruits.
Our products are made fresh daily on the premises. We offer over 24 flavors and a select number of bespoke gelato cakes and single serving pieces.
Although our inspiration is derived from our Italian roots, our customers are our real source of inspiration.

Gelato & Co. Colorado was born from a dream shared by the whole Barsness family: Susan and Dean, along with their kids Jonathan and Sarah.
It’s a story that started with the family’s passion for Italian culture and cuisine which stems from their Italian origins. Susan’s father Hugo was born in Barga– a Tuscan hilltop town outside of Lucca. After a lifetime of experiencing all small-town Italy has to offer, the family wanted to bring the Italian dessert café experience to Denver.
The family shares a mutual passion for authentic Italian gelato, pastries and espresso – in October 2020 they opened their locally-owned and operated shop in Highlands Ranch, CO.
